Case in point: this delicious fresh mango salsa.
For a quick and easy main dish, try pairing it with marinated chicken or roasted shrimp. Pro tip: During peach season, I love to substitute half of the mangos with fresh peaches!
1 ½ cup ripe mangos*, peeled, seeded, and diced (approx. 2)
½ cup sweet red pepper, diced
¼ cup red onion, small diced
1 minded fresh jalapeno pepper (optional)
1 T cilantro or parsley
2 T rice vinegar
¼ kosher salt
Freshly ground pepper to taste
Mix all ingredients in a medium bowl. Let stand for 10-15 minutes to allow the flavors to blend.
Yields 2 ½ cups *Mangos can be substituted for almost any fruit!
