What do you cook on a cold snowy day?

Classic Beef Chili

2 lb. Ground Beef (I use 1lb 80/20 & 1lb 90/10)

¼ cup Olive Oil
1 cup Diced Red Bell Pepper
1 cup Diced Green Bell Pepper
2 cups Diced Yellow Onion
1 teaspoon Minced Garlic

1 ½ teaspoons Kosher Salt
1 ½ teaspoons Ground cumin
1 ½ teaspoons Oregano
¼ cup Chili Powder (I prefer Simply Organic)


1 28oz. Can Diced Tomatoes, undrained
¼ cup Tomato Paste
3 cups Beef Broth
1 cans Light Red Kidney Beans, drained
1 cans Dark Red Kidney Beans, drained
1 Tablespoon Light Brown Sugar



In a skillet over medium-high heat, brown the ground beef and drain.

In a large pot, sauté the bell pepper and onion in oil until slightly soft. Add the minced garlic and sauté 1 minute.

Add browned beef, salt, and spices.

Add tomatoes, tomato paste, broth, beans, and brown sugar.

Bring to a boil, and then reduce heat to low. Simmer, uncovered, for approximately 30 minutes.
